Easy Spring Breakfast Idea: Creamy Strawberry Overnight Oats Recipe

Overnight oats are a breakfast must-have on busy mornings. With just 5 minutes of prep before bed, I wake up to a ready-to-go meal in the fridge! To take my morning meal from good to gourmet, I love adding delicious toppings—especially those in season. Right now, it's all about strawberries.

Creamy Strawberry Overnight Oats Recipe

Ingredients

Makes 2 servings.
  • 1/3 cup unsweetened almond milk (or milk of choice)

  • 1 cup rolled oats (certified gluten-free if required)

  • 1 cup plain Greek yogurt (dairy-free if required)

  • 2 tsp date syrup (maple syrup or honey will work as well)

  • 1/4 cup hemp hearts

  • 3/4 cup organic strawberries, chopped

Step 1: Prep the Night Before


  1. In a large glass container, combine the almond milk, rolled oats, Greek yogurt, date syrup (or sweetener of choice), and hemp hearts.

  2. Stir well to thoroughly combine all ingredients.

  3. Seal the container and place it in the refrigerator overnight, allowing the oats to soak and soften.


Step 2: Add Toppings and Serve

  1. The next morning, remove the container from the fridge.

  2. Stir the overnight oats mixture to ensure it's well combined.

  3. Top with chopped organic strawberries.

  4. Serve and enjoy your creamy strawberry overnight oats!

 

Notes:

  • Storage: Leftovers of these creamy strawberry overnight oats can be stored in the refrigerator for up to 4 days, making it a convenient make-ahead breakfast option. Consider doubling the recipe to have breakfast ready-to-go for most of the week! You can also portion each day's serving into separate containers for easy grab-and-go mornings.
