Giant ground turkey zucchini boats

You may be wondering, why GIANT turkey zucchini boats? Well, the farmer's market down the street was selling massive zucchinis for $5 each during the summer. How could we say no?? If it's not zucchini season, or you don't have a massive zucchini on hand, a few regular-sized zucchinis will work just fine.

Giant Ground Turkey Zucchini Boats (GF/DF)


Ingredients

  • 1 giant zucchini (or 3-4 small ones)

  • 1lb extra lean ground turkey

  • ¾ cup tomato sauce

  • ¼ cup df cheese (I used Plantworthy Foods Original Cheeze Sauce)

  • taco seasoning (or whatever seasoning you prefer)

  • 1 tbsp extra virgin olive oil

  • salt

Directions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.

  2. Wash and then chop off the ends of the zucchini.

  3. Slice the zucchini down the middle lengthwise and scoop out the middle into a bowl. Leave the outside of the zucchini to be about half an inch thick.

  4. Oil and salt the fleshy side of the zucchini and then place it face down on the baking sheet. Bake for 10 minutes.

  5. While the zucchini is baking, cook the ground turkey in a pan and season with the taco seasoning.

  6. Add the tomato sauce and 1 cup of the zucchini flesh (chop it up a bit if necessary) to the pan with the seasoned turkey and combine.

  7. Remove the zucchini from the oven and turn it over so that the fleshy side is now facing up. Fill the pockets with the turkey mixture and top with dairy free cheese. Note: you can also add the dairy free cheeze sauce as the last step since it will already be hot from warming on the stove.

  8. Bake for another 15 minutes. Remove the zucchini from the oven and let it cool. Cut each zucchini half in the middle to make 4 zucchini boats. Serve immediately and store any leftovers in a container in the fridge for up to 3 days.
